Collards greens are such a easy, nutritious and quick wrap. They are also such a beautiful shade of green and remind me of countries where food is served on banana leaves.

The content of the wrap does take time to cut and assemble but so worth the final outcome. The part that contributes amazing flavour in the walnut pate.

Ingredients

1 large collard leaf,  remove the middle vein

Walnut pate 

1 cup walnuts

1/2 jalapeno, remove seeds

1 clove garlic

1 small tomato

Himalayan salt to taste

Blend all the above in a food processor  and keep aside.

Filling 

1 carrot, shredded

1/2 cup cherry tomatoes, halved

1 white radish, julienned

3 inch cucumber, julienned

2 green onions, halved

1/4 avocado, sliced

Layer filling as below and roll up the collard leaf. Tuck in the ends. Cut in half and serve. Voila!
