Summer Harvest

 

One of my favourite things about summer is the taste of sun-ripened tomatoes. And this salad allows the  flavours of the other ingredients to bring out the taste even more. Everything in this dish complements each other. In my childhood this was a very common accompaniment to our Indian meals. In my culture it is called kachumber. I add some fresh mint, which was not included in the childhood version. it is easy to make and truly tastes the best in summer with tomatoes that are grown outdoors. The tomatoes I used were grown in my sister’s organic garden.

 

Summer Tomato Harvest Salad

 

Ingredients:

3 tomatoes grown outdoors, chopped

1/2 red onion, sliced

1 green chilli, deseeded and sliced

1 tsp cilantro

1 tsp mint

1/2 lemon, squeezed

1/8th tsp Himalayan salt

Mix the first 5 ingredients. Add the salt and lemon juice just before serving. So good!  Enjoy!
