The days are getting longer and warmer and summer salads are the ideal easy mealtime accompaniment. This salad has all the flavors of summer vacation in the Mediterranean. And while most of us are not travelling we can certainly bring those flavors to our tables. My family absolutely loves this salad. I use all organic ingredients and have linked some of the products I use. The vegan feta is must-try and comes from Greece. This recipe serves 4 people.
Ingredients
5 leaves Romaine Lettuce, cut into small pieces
5 Radishes, sliced
2 Tomatoes, chopped
1/2 cup pitted Kalamata Olives
1/4 packet of Violife vegan Feta cheese, cubed
1 clove Garlic, grated
1/3 English Cucumber, sliced
1/4 tsp dried Oregano
1/4 tsp dried Herbes de Provence
1/4 cup Olive oil
Himalayan Salt to taste
Instructions
Assemble all the salad ingredients and mix. Add the olive oil and salt before serving and mix well. Enjoy this very flavoursome salad on its own or to accompany any meal.
