I love this chickpea salad and the flavor explosion of the simple ingredients. It is filling, nourishing and so easy to make. I have replaced the traditional yogurt with a plant-based version and the result is just as delicious. All the ingredients I used were organic and so flavorful. The following recipe is enough for a meal for 1 person or a snack for 2.
Ingredients
2 cups cooked chickpeas (can also use canned chickpeas)
1 tomato, cubed
3 green onions,, sliced (can also used 1 small red onion, diced)
1 tbsp cilantro
1/2 green or red chilli or red chilli powder (optional)
1/2 cup plant-based yogurt
1/4 tsp Himalayan Salt
Chana Masala, to sprinkle
Mix all the ingredients together except the Chana Masala which can be included or sprinkled on the top. Chana Masala can be substituted with Chaat Masala from Indian grocery stores. To keep things simple you can just use cumin powder instead.
Can be served in lettuce leaves. So delicious!
